ADAM LONGWORTHChef de Cuisine
Chef Adam Longworth rejoined Gotham in January of 2011 as Chef de Cuisine. He left Gotham in 2009 for Washington D.C. restaurant 701, where local press gave him accolades for his inventive dishes. Prior to 701 Longworth had been with Gotham since 2002 when he was hired as a line cook. After a short stint under Tom Collichio at Gramercy Tavern in 2003 he went to Philadelphia to help Portale open Striped Bass. Longworth moved back to New York to rejoin Gotham as a Sous Chef in 2004, becoming Chef de Cuisine from 2007 to 2009.
Longworth’s first exposure to cooking was from his father at a humble establishment in his native Vermont. His father’s inventive cooking drew a loyal and wide following.
After graduating high school Longworth came to recognize the impact of his father’s culinary instincts. He found himself drawn to the Culinary Institute of America. Graduating in 2001 Longworth went to work for Chef David Nichols at the Mandarin Oriental, London. He worked his way up to Chef de Partie and solidified his determination for the kitchen.
Chef Adam Longworth’s close relationship with Alfred Portale has given him the opportunity and mentorship to develop his natural curiosity for world cuisines. Travelling with Portale to Singapore, Japan, China, Europe and Alaska has exposed Longworth to a variety of cuisines and techniques, which he continues to adapt and incorporate in the menu at Gotham.
